Indian Fried Rice

India has got to be one of the most fascinating places I have ever been. I love so many things about it, but the food was defiantly on my top 5 favorites! I learned how to make this recipe after returning from a short stay in Calcutta. Basmati rice is one of my favorites. It is a long grain rice that has such a unique smell. The jalapeno soy sauce mixture is a must to put over the rice, so don't leave it off!

Ingredients
4 cups basmati rice (cooked)
½ green pepper
½ yellow pepper
½ red pepper
½ tomato
1-2 bunches of green onions
1-2 jalapeño
8-10 pieces of bacon (sliced)
4-5 cloves of garlic (minced)
4 eggs
½ teaspoon cayenne pepper

Jalapeño Soy Sauce
½ bunch green onions
1 tablespoon minced garlic
1 jalapeño
soy sauce to cover

Method
1. With oil in a frying pan add chopped garlic until darkened followed by bacon and jalapeño. Meanwhile beat 4 eggs in a bowl with a bit of salt.
2. Pour into a large pot with hot oil on the bottom. Stir until eggs are scrambled then slowly add and stir in rice then add green onions.
3. In the frying pan add cayenne pepper. Cook for a few 5 or so min. then combined all ingredients into the pot of rice.
