1 lrg bunch spinach
½ c. blueberries, (or other fruit)
½ c. sliced almonds, toasted or candied
¾ lb. mushrooms
¾ lb. swiss cheese, sliced and cut into strips or small squares
½ lb. bacon, cooked
¾ tsp grated onion, (optional)
DRESSING
¾ tsp grated onion
¾ c. vegetable oil
⅓ c. balsamic vinegar
⅓ c. sugar
1 tsp salt
⅛ c. mustard
¾ tbsp. poppy seeds
Method
Mix salad ingredients together and set aside.
Make dressing by combining ingredients and whisk well.
Toss over salad just before serving.
