Lemon Balsamic Strawberries with Mascarpone Cheese
This is a delicious dessert with really unique flavors. The balsamic glaze is amazing with strawberries and mellowed by the cream. It's quite rich so start with small servings.
Ingredients
3 pint strawberries1 tsp vanilla extract
¾ cup whipping cream, chilled
¾ cup mascarpone cheese
1 tsp lemon juice
1/4 cup sugar + 2 tsp
½ cup balsamic vinegar

Method
1. Combine vinegar, 2 teaspoons sugar, and lemon juice in heavy small saucepan. Stir over medium heat until sugar dissolves.
2. Boil until syrup is reduced to 1/4 cup, about 3 minutes. Transfer to small bowl; cool completely. Cover and refrigerate.
3. Combine mascarpone, cream, vanilla, and 2 tablespoons sugar in medium bowl. Whisk until thick soft peaks form. Cover and refrigerate up to 4 hours.
4. Combine berries and remaining 2 tablespoons sugar in large bowl; drizzle with balsamic syrup and toss to blend. Let stand 30 minutes.
5. Divide mascarpone mixture into 6 custard dishes and top with berries and syrup.
