Can't Miss Fish
This recipe is from Paula Deen, very simple, but nice. Serve with asparagus, baked potatoes, sautèed onions/mushrooms, and sliced apples. Mix mayo with ketchup for an excellent sauce.
Ingredients
4 (8-ounce) fish fillets (any variety), about ½-inch thick
1 teaspoon salt or to taste
½ teaspoon pepper
1 cup chopped onions
1 bell pepper, chopped
¼ stick butter (sliced)
1 tablespoon Worcestershire sauce (or more to taste)
1 cup freshly grated Parmesan (to heavily cover fish)
Method
1. Preheat oven to 350 degrees.
2. Season the fish with the salt and pepper. Spread the onions and pepper in a 9x13" glass baking dish and place the fish on top. Dot the fish with butter. Sprinkle with Worcestershire sauce. Bake for 12 minutes or until done, then baste fish with pan juices. Cover the fish with Parmesan and then place under the broiler for about 2 minutes or until the cheese browns. To serve, spoon the vegetables over the fish.
