Mizithra with Browned Butter Noodles
This is always a quick and easy recipe. The mizithra is what makes this so unique so don't substitute it with another cheese. I am usually generous with the mizithra as I love the flavor. If you want a little more spice, add some garlic.
Ingredients
1 lb. dried spaghetti
½ cup (1 stick) plus 1 tablespoon unsalted butter, cut into tablespoons
1 cup grated mizithra cheese
fresh cracked black pepper and kosher salt, to taste
chopped fresh parsley for garnish
Method
1. Cook pasta according to package directions.
2. To brown butter, melt it in a skillet over medium heat. As butter melts, it will foam slightly. Continue to cook until you notice little brown bits forming at the bottom of the pan.
3. While pasta is cooking, prepare browned butter. In a skillet, heat butter over medium heat. Butter will foam slightly as it melts. Continue to cook until you notice little brown bits forming at the bottom of the pan.
4. Lightly stir butter until it is tan in color and has a nutty aroma. Be careful not to overcook as the butter browns very fast near the end.
5. Remove from heat and set it on a cool surface.
6. Strain your pasta and return it to the pasta pot. Pour browned butter over the top and sprinkle with grated mizithra cheese. Toss to combine.
7. Season to taste with salt and pepper.
8. Transfer to platter. Garnish with parsley and serve.
