Salsa Verde
This is the reason why I grow tamatillos in my garden. I love the lime flavor in this salsa. It takes some effort, but I remove the skins of the tamatillos. They are much thicker than tomato skins and are not fun to eat.
Ingredients
2 lb. tomatillos, remove stems, wash, cut in half
1-2 jalapeno, removed seeds and stem, cut in half
¼ small onion, finely diced
¼-⅓ c. cilantro, minced
¼-½ lime, zest and juiced
1 clove garlic
¼ tsp. sugar
½ tsp. salt
Method
1. Cut tomatillos in half and place tomatillos and peppers with skins up and broil for 4-5 min until skins blister and brown. Remove skins!!!
2. Place all ingredients in a blender and blend.
3. Enjoy!
