Spinach Artichoke Stuffed Chicken with Sweet Mustard Sauce



Great chicken dish from my friend Elise. Try to get the chicken as thin as you can. The sauce is wonderful! You may want to double it. The whole grain mustard is a MUST-no substitutes.



Ingredients
1 cup spinach, chopped
¾ cup grated Parmesan
12 oz jar of marinated artichokes
4 chicken breast, made think

Mustard Sauce
1 tablespoon whole grain mustard
1 tablespoon honey
2-3 cloves garlic, minced
1 teaspoon olive oil
Juice of ½ lemon
Salt and pepper to taste

Method
1. Mix spinach, parmesan, artichokes together then roll into center of pounded chicken. Hold together with a toothpick.
2. Mix sauce ingredients together and set aside.
3. Cook chicken at 375 degrees for 30-35 min. Remove from oven and pour sauce over top.
