Palak Paneer

This is a delicious Indian dish made with homemade cheese (paneer) and a spinach gravy (palak). Paneer can be pan-fried, grilled or crumbled. Serve hot with Indian bread such as roti or naan.

Indredients

Paneer
4 cups of whole milk
Juice of 3 limes or 1 lemon
1-2 teaspoon of salt, to taste

Palak
1 large bag (500gms) fresh spinach, rinse well
1 jalapeño, or other hot chili
1 teaspoon salt
1 onion, cubed
2 Tomato, cubed
2 teaspoons minced ginger
¼ cup water
1 teaspoon cumin powder
¼ cup water mixed with 1 TB of corn flour
2 teaspoons ghee (optional)
Coconut or fresh cream, to taste  
 
Method

To make Paneer
Add salt to milk then bring milk to a boil stirring constantly. Remove from heat being careful as milk will boil over as it begin to boil. Add lemon juice and milk will curdle. Strain milk through a cheese cloth, muslin, or thin dish cloth (15-20 min). Sqeeze remaining whey and place cheese on a cookie sheet to let set. When cheese is set, cut into cubes to use in Palak. As an option, you can pan fry the paneer cubes, for a crusty surface, before placing them in the palak.

To make Palak
In a saucepan mix together onion, tomato, ginger, ¼ cup of water and cumin. Sauté until veggies are tender then remove from heat and puree. Return to heat and add water/corn flour mixture, ghee, and cream. Bring to a boil then remove from heat. Before serving add paneer and serve.
