Blue Cheese Wedge Salad with Balsamic Reduction

This is a fantastic salad that is a meal by itself.  However, if you want it as a side, cut the quarter wedges into 1/8.  Don't shy away from the blue cheese, it's delicious in the dressing.  However if you are not a blue cheese fan remove it as the dressing is still quite good on it's own. If your a vegetarian omit the bacon.

Ingredients
Balsamic Reduction
1cup balsamic vinegar
¼ cup honey
½ teaspoon salt 

Blue Cheese Dressing
1 cup mayonnaise
1 cup sour cream
1 cup buttermilk
1 tablespoon white wine vinegar
1 tablespoon Worcestershire sauce
2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons dry mustard
2 teaspoons sugar
Salt and Pepper to taste black pepper
12 ounces Crumbled Blue Cheese
 
Salad
2 heads iceberg lettuce, cut into 4 wedges
1 cup cherry tomatoes, halved
1 package bacon, cooked and crumbled
Garnish with chopped red onion, to taste
 
Method
1. To make the reduction, combine vinegar, honey and salt in a sauce pan. Place heat on medium. Bring to a simmer and stir frequently until liquid becomes syrupy. Remove from heat and set aside.
2. Mix ingredients of dressing together adding cheese last, and set aside.
3. Assemble salad by drizzling balsamic reduction on plate. Place wedge on top of reduction then drizzle more on wedge followed by blue cheese dressing. Top with cherry tomatoes, bacon, and onion.
