Rice Pudding


This one comes from Judy's kitchen and is a real comfort food! It goes well with a cold snowy evening. Always a good idea when you have left over rice from a previous meal.

Ingredients
2 cups cooked rice
2 cups milk
1 can evaporated milk, (5 1/2 ounce)
½ cup raisins (optional)
1 tablespoon Cornstarch
¼ teaspoon Salt
½ cup + 2 Tbsp. Sugar
2 eggs slightly beaten
Cinnamon
1 teaspoon Vanilla

Method

1. Scald the milks together in a saucepan.
2. In a separate bowl add cornstarch, salt, sugar, and blend.
3. Stir in milk mixture until thick and smooth.
4. Carefully mix in eggs and vanilla and stir until thickened.
5. Add rice.
